Memorial Day Weekend Picnic

Happy Memorial Day! I hope everyone is having a good day spent with family remembering and honoring the many lives our country has lost in service. I feel so incredibly grateful to live here and especially grateful for every man or woman who has served our country.

The other day my boyfriend Tim and I had a picnic and I thought it would be a fabulous idea to do for a “social distanced” Memorial Day if you can’t make it to the beach or can’t have a barbecue. Grab a loved one and head to a scenic spot to set up camp!

We drove over to a cute spot near us on the Delaware River. I’ve been dying to see water… I think I’m going through beach withdrawals! This was a closer, next-best thing option!

What to Pack:

When picnicking you want to pack easy dishes preferably finger foods so you don’t need extra silver-ware or dishes! I decided to make the most delicious paninis and wrap them in tin-foil to keep them warm. My mom has been making these for years and they’re really so simple. Here’s how you make them…

  1. Brush 2 slices of sour dough bread with walnut oil
  2. On the other side of the bread (this will be the inside) spread apple butter on both pieces of bread
  3. Put some slices of cheddar cheese on bread
  4. Cut up a green apple into thin slices, place two slices on the bread
  5. Top with sage, close up the sandwich
  6. Put in a panini press for a couple minutes on medium to high until cooked to your liking (you could also cook on a pan if you don’t have a press!) and voila! delicious gourmet apple grilled cheese panini 🙂

After making a few of those and wrapping them in tin foil I packed some grapes and of course some potato chips… its a holiday right?! Oh and some short-bread cookies for dessert!

To drink I packed some San Pellegrino for me and some Coca-cola for Tim. Next, I grabbed some napkins and placed everything in an adorable picnic basket and I was ready to go! Easy, basically no-clean up and we had so much fun! It would be a great activity if you have no plans for the holiday today.
